Overnight Chia Seed Porridge

  • 3-4tbsp chia seeds.
  • 250ml almond/ coconut milk.
  • Sprinkle of cinnamon.
  • Portion of fruit chopped into small chunks – e.g cubed mango, banana, pear, grated apple.
  • Place all in airtight jar, stir occasionally to avoid clumps & close lid. Place in fridge overnight.

Buckwheat Pancakes

  • 130 g buckwheat flour.
  • 200 ml unsweetened almond/ oat milk.
  • 100 ml water.
  • 0.5 tsp vanilla extract/ maple syrup.
  • 0.5 tsp cinnamon.
  • 0.5 tsp salt.
  • Dash of stevia (optional).
  • 1 tbsp Coconut oil
  1. Mix all ingredients together – Nutribullet or hand mixer
  2. Melt the coconut oil in pan & add several large spoonfuls of the batter, tilting from side to side to get batter to spread out evenly & thinly
  3. Cook for several minutes until lightly golden and lift to turn with a spatula
  4. Cook flip side in same way
  5. Serve while warm
  6. Lay on sliced banana, fresh berries, any seasonal fruit, sprinkle of flax/ other seeds, stewed apple & cinnamon, nuts, etc…!

Note: This batter can be made the night before & stored in fridge ready to cook in morning. Also, you can make double the mixture.
