Vegetable and lentil soup

Ingredients

  • 1 onion
  • 2 carrots
  • 2 sticks celery
  • 1 courgette
  • 1 pepper
  • 2 cloves garlic
  • 50g lentils (I prefer red split)
  • 1 litre of good quality veg stock (like Dr Coys or Marigold)
  • Olive oil or tbsp coconut oil
  1. Peel & chop all veg into similar size
  2. Heat oil, add onion & garlic & cook until softened. Add in all other veg and stir.
  3. Add stock & bring to the boil, then simmer for about 20 mins
  4. Rinse lentils well, add after step 3, then cook for additional 15 mins
  5. Depending on your preference you can blend throughout, or blend half keeping the soup a little chunky
  6. Season to taste or add in herbs of your choice

Speedy Green Soup

  • Handful frozen parsley
  • 1 cup frozen peas
  • 1 cup frozen/ fresh broccoli
  • 1-2 litres chicken/ veg stock
  • 1 red onion or 2-3 shallots
  • 1 pat of butter
  • 1-2 cloves garlic
  1. Soften onion in butter for couple minutes
  2. Add remaining ingredients, stirring for few minutes until all the veg are coated in butter
  3. Add in stock and simmer for 15 mins
  4. Blend to required consistency

Spicy quinoa salad

Ingredients

  • 50g quinoa (uncooked weight)
  • 100g feta diced
  • Half cucumber chopped
  • Half red pepper diced
  • Large handful rocket/ salad leaves
  • 2 scallions
  • 3 tbsp pumpkin seeds
  • Handful baby tomatoes halved
  • 1 red chilli sliced
  • I tsp balsamic vinegar
  • Freshly ground black pepper
  1. Cook quinoa in boiling water according to package instructions
  2. Drain, rinse & allow to cool
  3. Assemble remaining ingredients except balsamic vinegar & black pepper into bowl
  4. Sprinkle vinegar on top and season with black pepper

  • Half cucumber chopped
  • Half red pepper diced
  • Large handful rocket/ salad leaves
  • 2 scallions
  • 3 tbsp pumpkin seeds
  • Handful baby tomatoes halved
  • 1 red chilli sliced
  • I tsp balsamic vinegar
  • Freshly ground black pepper
  1. Cook quinoa in boiling water according to package instructions
  2. Drain, rinse & allow to cool
  3. Assemble remaining ingredients except balsamic vinegar & black pepper into bowl
  4. Sprinkle vinegar on top and season with black pepper
