Vegetable and lentil soup
Ingredients
- 1 onion
- 2 carrots
- 2 sticks celery
- 1 courgette
- 1 pepper
- 2 cloves garlic
- 50g lentils (I prefer red split)
- 1 litre of good quality veg stock (like Dr Coys or Marigold)
- Olive oil or tbsp coconut oil
- Peel & chop all veg into similar size
- Heat oil, add onion & garlic & cook until softened. Add in all other veg and stir.
- Add stock & bring to the boil, then simmer for about 20 mins
- Rinse lentils well, add after step 3, then cook for additional 15 mins
- Depending on your preference you can blend throughout, or blend half keeping the soup a little chunky
- Season to taste or add in herbs of your choice
